Easy Greek Inspired Snack Plate

Today I’m sharing this easy greek inspired snack plate! Featuring crispy fried halloumi, tzatziki, homemade crackers, cucumber, and greek olives. This spread is perfect for days when you just need to whip up something quick and satisfying either for a healthy snack or a lighter lunch.

You all know I'm a big fan of snacks as way to keep your blood sugar level stable — nobody has time to be hangry, and now to help prevent nausea during pregnancy which comes and goes. Carbs also have a bigger sweet spot these days, and I just want to say how grateful I am for hubby that's been baking all sorts of goodies like these seed and nut crackers and fresh sourdough to keep this mama satisfied!

What’s great about this is you can easily add or subtract to this snack plate based on what you have on hand! Think things like artichokes, sliced carrot, cherry tomatoes, roasted chickpeas, feta, pita, and hummus.

Ingredients:

  • Halloumi, sliced

  • Freshly squeezed lemon juice

  • Oregano

  • Olive oil

  • homemade nut + seed crackers (I also LOVE Mary’s Gone Crackers)

  • Greek olives

  • Cucumber, sliced

  • Tzatziki (find recipe here)

  • Sea salt flakes

Instructions:

  1. For the fried halloumi, heat a small to medium sized pan. Add 1 tsp of olive oil. Fry the halloumi about 3-4 minutes each side until lightly browned and crispy. Top off with a pinch of dried or fresh oregano and drizzle with a freshly squeezed lemon.

  2. Add the fried halloumi along with the other ingredients to a plate and voila — ENJOY!
